No Bake Energy Balls

Okay new recipe that is Gregory and Kirk approved!


INGREDIENTS

  • topping

    • 1/4 cup unsweetened shredded coconut (optional)
    • 1 teaspoon unsweetened cocoa powder
    • 1 teaspoon date sugar
  • balls

    • 1/2 cup old-fashioned rolled oats (whole grain)
    • 4 Medjool dates, pitted
    • 2 tablespoons unsweetened almond butter
    • 1 teaspoons pure vanilla extract
    • 1/4 teaspoon salt
    • 2 tablespoons water
  • mix-ins - can use some or all

    • 1/8 cup sliced, toasted almonds, chopped
    • 1/8 of large (100 gram) unsweetened chocolate bar, chopped
    • 1/8 cup old-fashioned rolled oats

INSTRUCTIONS

    1. Put dates in bowl of warm water and set aside.
    2. Place the shredded coconut in a shallow bowl, mix with date sugar and unsweetened cocoa powder and set aside.
    3. Place oats in a food processor with flax seed and pulse until a coarse flour forms, about 1 minute.
    4. Drain the dates from water. Pat dry and chop into thirds. Add dates, almond butter, vanilla, salt and water into the oats in the processor and process until the dates are finely chopped, scraping the side of the bowl if necessary. Process until the mixture starts to clump together (about 2 minutes).
    5. Add whatever mix-ins you are using - really gives them a nice crunch / flavor. And do a quick pulse on the food processor.
    6. Wet your hands with warm water and then take about a tablespoon (or less if you want smaller ones) of the mixture into your hand and roll into a ball.
    7. Roll each ball in the coconut mixture and put in the refrigerator. Store in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 1 month.
  • Makes about 20 balls depending on how you roll them. As made above, estimate for nutrition per ball is 64 calories, 0 added sugar, 2 grams protein, 1.6 grams fiber, 3.5 grams fat.

You can also substitute unsweetened peanut butter but would recommend using less - the peanut flavor was overwhelming the rest of the recipe (in my opinion).
