Healthy "brownies" - easy to scale - this fills 3 silicone cupcake holders
1 ripe banana
1 Tablespoon Almond Butter (no added sugar)
1 teaspoon unsweetened cocoa
1 teaspoon vanilla
Mash banana and then mix the rest in. Pour into 3 spayed silicon cupcake holders (or regular cupcake holders).
Bake at 350 for 15 minutes.
You can lick the bowl, it is so good.
Other ideas - shave unsweetened chocolate bar and put a few slivers of chocolate in it. Add some small pieces of dates.
HEALTHY EXTRA MOIST CAKE (ADAPTED FROM HERE):
INGREDIENTS
- 2 bars (150g) 90% cocoa (or higher) chocolate - I used 90% Alter Eco Super Blackout (note: could use unsweetened chocolate and increase dates)
- 1 Tablespoon unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 8-9 medjool dates
- 3 eggs
- 1/8 cup coconut oil
- 1/8 cup Two Good vanilla yogurt
- 1 teaspoon vanilla extract
INSTRUCTIONS
- Preheat the oven to 350 ° F (180 ° C).
- Soak dates in warm water until ready for them (drain water before using)
- In a food processor, pulse chocolate, cocoa powder and baking soda until texture of coarse sand.
- Pulse pitted dates, then eggs, coconut oil and vanilla.
- Transfer the batter into a 9" circular baking pan (sprayed with coconut oil spray).
- Bake for about 25 minutes or until a toothpick comes out clean.
- Allow to cool before serving. Sprinkle with light dusting of unsweetened cocoa powder
- Cut into small pieces (I did 16 small slices) and keep in refrigerator for a few days.
- Freeze the rest. Can heat small frozen piece in microwave for 15 seconds.
