Sweet Potato Hash
ingredients:
1 small sweet potato, diced
1/2 sweet onion, diced
1/2 jalapeno, seeded and diced
1-2 eggs
olive oil spray
salt, pepper to taste
instructions:
Saute sweet potato in a pan w/ olive oil spray. Cook until starting to get browned.
Add in a diced sweet onion and diced jalapeno. Continue to saute until onion is soft and everything looks browned. Then make a few holes in the hash, spray and crack an egg into each hole (can put in 1-2 eggs).
Cover pan and cook for 3 minutes for a slightly runny egg. Longer if you don't like it runny. Salt and pepper to taste.

Salmon with Avocado Salsa
(Recipe from here)
INGREDIENTS
- 1 pound wild caught salmon
- 1/8 cup olive oil
- juice of 1-2 limes
- 1/8 cup freshly squeezed orange juice
- 1/2 teaspoon garlic, chopped (I use less)
- 2 green onions
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt and pepper
tomato avocado salsa (make this all the time - good by itself or with almost any meat)
- 2 cups cherry tomatoes, halved
- 2 ripe avocados, diced
- juice of 1 lime
- 2 to 3 green onions, chopped
- 1 jalapeño pepper, seeded and diced
- 1 tablespoon olive oil
- pinch of sea salt
INSTRUCTIONS
- Place the salmon in a 9x13 inch baking dish.
- In a blender, combine the olive oil, lime juice, orange juice, garlic, green onions, cayenne, salt and pepper. Pulse until combined. Pour the marinade over the salmon and let set for at least 15 minutes - can marinade for a few hours.
- While marinading, in a medium bowl, combine the tomatoes, avocado, lime juice, green onions, olive oil, jalapeño, and a pinch of salt. Set aside until ready to serve alongside the salmon.
- Heat your grill
- Grill for about 10 minutes skin side down and then flip to get nice grill marks on top.
- Top with the salsa
NOTES
1. salsa was delicious and eat it by itself, on turkey burgers, with sweet potato crackers
